Weekend To End Women’s Cancers and The Toronto Blue Jays

As most of you know this years Weekend to End Women’s Cancers will be held at the Roger’s Centre…home of our wonderful Blue jays !!!

The Toronto Blue jays are having their annual breast cancer awareness day on May 14th/13 !! The game starts at 7:00pm, and I am honored to say that a very dear friend, team member and a true cancer fighter, Randy Mellon, will be throwing out the first pitch. She is such a an inspiration to everyone walking and those on her team!!

Dijon Grilled Asparagus and Onions

Dijon Grilled Asparagus & Onions

Dijon-Grilled-Asparagus-Onions

Spring onions are grilled with asparagus spears for a smoky sweet flavor as well as a stunning presentation. Sliced shallots, white wine vinegar and Dijon mustard provide a savory contrast to season these delectable vegetables. This recipe comes to us from Kristina of Formerchef.com.

Serves 8

For the Dijon vinaigrette:

1/2 shallot, thinly sliced
1 tablespoon white wine vinegar
3 tablespoons olive oil
2 teaspoons Dijon mustard
salt and pepper, to taste
For the grilled asparagus and onions:

1 pound asparagus spears, trimmed
1 pound spring onions*, halved lengthwise
1 tablespoon olive oil
*Spring onions are sweet onion bulbs attached to greens found in farmer’s markets and the produce section of grocery stores in Spring and Summer.

To make the Dijon vinaigrette:

Whisk the sliced shallot, vinegar, olive oil and Dijon mustard together in a small bowl. Season with salt and pepper to taste.

To complete the Dijon Grilled Asparagus & Onions:

Preheat a grill to medium-high.

Toss the trimmed asparagus and halved onions in a large bowl with the tablespoon of olive oil, taking care to ensure all ingredients are evenly coated.

Place the asparagus spears and spring onions onto the heated grill, taking care to place the green portion of the spring onions on a cooler part of the grill. Grill, rotating every 2 minutes or so for about 6 minutes, or until the asparagus are tender.

Plate the asparagus and onions on a large platter. Drizzle with the Dijon Vinaigrette, divide into 8 portions and enjoy!

Positive Healthy People

Over the last 10 months I have tried really hard to better my health, diet and watch my weight.
I have tried a few things, and all have worked out well. I started with Weight Watchers last April, and managed to loose 20-22 pounds. Its a great program, I started it on line and tracked everything on my phone.
I did a lot of walking while training for the “Weekend To End Women’s Cancers”. I have to say being down more than 20 lbs at the time of the 2012 walk,(Sept) I really did find a huge difference.

Of course the new year started and I had to get back on track. Christmas brought on 5 pounds, which isn’t that bad, but can lead to ten pounds in no time.
I started my own posts on Face book, and a few friends joined in to start loosing weight, or just get back on track to being healthy.
About three weeks into that, I got an email from my friend Sue, and team-mate from the “Walk”, to join a ten week “Biggest Loser Challenge”….and things changed….lol. I don’t really watch the show, but thought I could use the support of others and needed a challenge.
I think the group ended up with close to 80 participants, and has lots of motivation. For instance…money!
You pay 20$ to join and winners get money.

If you don’t weigh in on the Friday…you will owe 1$.

If you gain weight….you will owe 1$.

Now that is a lot to motivate me. There was also a group created in Facebook, and even though we are competing against each other, there is tremendous support, tips, and recipes shared. What a great idea, and its working for me.

The first week, I lost exactly two pounds. The second week, even more 3.2 pounds. I really think the inspiration from others is really helping. We are starting week 3, and i’m really focused.

I would love to loose 20 pounds in this ten week challenge, and I am on track to do it.
