Finally a recipe with broccoli that doesn’t have 50 grams of fat. I am on month two of Weight Watchers, so I have become very aware of what I put in my mouth. Last night i was searching for recipe with broccoli, and had no luck, so I boiled it and ate it….lol. Well I just found this one, and its very healthy.
In this simple veggie side dish, all you need to do is dress broccoli with olive oil and season with a hint of salt to bring out its naturally hearty flavor. The scent of Parmesan cheese will attract hungry mouths to the table and the earthy taste of freshly roasted broccoli will have them coming back for more. Serves 6
8 cups broccoli, chopped bite sized florets
2 tablespoons olive oil
1/2 teaspoon sea salt
1/4 Parmesan cheese, shredded
Preheat an oven to 450 degrees.
Toss the broccoli with olive oil and season with the sea salt.
Roast for 15 minutes. Remove the broccoli from the oven, sprinkle with the shredded Parmesan and return to the oven for an additional 5 minutes. Let cool and enjoy
