Meatless Monday, Broccoli with Parmesan

Finally a recipe with broccoli that doesn’t have 50 grams of fat. I am on month two of Weight Watchers, so I have become very aware of what I put in my mouth. Last night i was searching for recipe with broccoli, and had no luck, so I boiled it and ate it….lol. Well I just found this one, and its very healthy.

In this simple veggie side dish, all you need to do is dress broccoli with olive oil and season with a hint of salt to bring out its naturally hearty flavor. The scent of Parmesan cheese will attract hungry mouths to the table and the earthy taste of freshly roasted broccoli will have them coming back for more. This recipe comes to us from Jen of Appetite for Conversation.

Serves 6

8 cups broccoli, chopped bite sized florets
2 tablespoons olive oil
1/2 teaspoon sea salt
1/4 Parmesan cheese, shredded

Preheat an oven to 450 degrees.

Toss the broccoli with olive oil and season with the sea salt.

Roast for 15 minutes. Remove the broccoli from the oven, sprinkle with the shredded Parmesan and return to the oven for an additional 5 minutes. Let cool and enjoy

Meatless Monday Asparagus Tart

I love asparagus, but not all my Meatless Monday recipes are low fat….lol…..

Locally grown asparagus is one of the great treats of Spring. It’s only in season for a couple of months, but when it comes, it comes thick and fast. Great on its own with melted butter, it adds a real touch of class to this simple but yummy tart. This recipe was created by Annie Bell and can be found in The Meat Free Monday Cookbook.

1 pound finger-thin asparagus spears
8 ounces puff pastry
2/3 cup crème fraîche
1/2 teaspoon Dijon mustard
2 tablespoons freshly grated vegetarian
parmesan
2 medium organic egg yolks
sea salt and freshly ground black pepper
Preheat the oven to 400°F. Bring a large pan of salted water to a boil. Cut the asparagus spears where they begin to become woody. Add to the pan, bring back to a boil and cook for 4 minutes. Drain and refresh in cold water. Remove and dry on a clean towel.

Roll the pastry thinly into a rectangle 16 x 8 inches and trim to neaten the edges—if you don’t have a baking sheet large enough, adjust the dimensions accordingly. Lay the pastry on the baking sheet. Blend the crème fraîche, mustard, Parmesan, 1 beaten egg yolk, and seasoning together in a bowl. Spoon this cream over the pastry, leaving 1 inch of pastry clean around the borders. Place the asparagus on top in a single layer. Beat the remaining egg yolk and paint the pastry borders. Bake the tart for 30 minutes.

Serve 5 minutes out of the oven, although it is excellent cold.

Look at these fantastic designs for kids. What a great idea for their wonderful imaginations. They really don’t get enough, of this much needed play-time.

Weight Loss Update – Week 5

Oh, I’m really getting into this now. I started a couple weeks on my own program, before I joined Weight Watchers On Line. So I just completed week #5 and I’m down 13 pounds.
How did I do this? I followed the Weight watchers plan, I walked, and If it wasn’t for the tracking program, I couldn’t do it. I like to see results in front of me…graphs etc. Seeing the progress really helps.

I haven’t walked a lot. Maybe twice a week. I use my IPod and track everything through Nike Running. Here we go more charts…..but I love it. I challenge my self, and see the progress on my IPod, or the Nike Running website. I don’t run, I walk….and take pictures of flowers….lol

The weather has been great. This past week, I walked Tuesday, Friday, and went out twice on Sat. I clocked a total of about 18km. And saw results, stayed on my points tracker, and lost 2.4 pounds this week. My three weeks on Weight Watchers I have consistently lost 2.2,, 2.0,,and this week 2.4 pounds.

I have goals for this week, and have planned out my meals. I am working a crazy schedule, and it consists of 4 double shifts, so I have to plan, or I will find myself waiting in the drive thru at McDonald. That can’t happen ! I work in a pharmacy full time, and part time do many events. This week, I will be at The One Of A Kind Craft Show in Toronto with Tail Wags Helmet covers. A hectic schedule, but I’m ready with my food plan.

Measured out my trail mix, for on the go situations ! Im going loose two more pounds this week to make 15lbs in total !!!!
